Cooking with Kurt: Apple Bread
Food, Recipes — By kurteng on October 20, 2009 1:43 pmI took this recipe from FoodTV.com but made some huge modifications (noted in italics). I used whole wheat flour as well as some flax seeds for more protein and fiber.
Ingredients
4 Large Apples (Golden Delicious works best!) shredded
1 cup applesauce
1/2 cup vegetable oil
1 teaspoon vanilla
2 eggs
1 cup granulated sugar
2 1/4 cups whole wheat flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 1/3 teaspoons cinnamon
1/4 teaspoon allspice
1/2 teaspoon nutmeg
1/2 cup walnut pieces
3 tablespoons flax seeds
6 tablespoons oatmeal
Cooking
Preheat oven to 350 degrees Fahrenheit.
Combine shredded apples, applesauce, oil, and vanilla. Add eggs and sugar and mix together. In another bowl, sift the flour, baking powder, baking soda, cinnamon, nutmeg and allspice. Mix in the rest of the dry ingredients saving 2 tablespoons of oatmeal for the end. Stir dry ingredients into applesauce mixture until blended. Do not over mix. Place mixture into 1 greased loaf pan and top the loaf with the remaining oatmeal. Bake for 55 minutes or until finished.
