Cooking with Kurt: Easy Strawberry Shortcake

This is a day late… and for good reason.  It’s Patty’s (co-worker) birthday and she loves strawberry shortcake.  Since I’ve been extremely busy at work, I had to improvise!  Something fast but very tasty, something savory but light and sweet.  Not to mention servings of 10+!  Let’s get started!

Ingredients
2 pints of strawberries
Sugar
Cool Whip
2x Pillsbury Homestyle Buttermilk Biscuits (each package serves 8)

That’s right… this is going to be semi-homemade, tasty, fast and will still be just as good as making it from scratch.

Preparations:
Bake your biscuits per package instructions. Otherwise, slice your strawberries any way you want! I sliced mine thin with a grater. Once you finish slicing/dicing your berries, add a couple of teaspoons of sugar to sweeten… not much but enough to make it nice and tasty.

Assembly
Cut your biscuits in half and add a nice dolop of your Cool Whip on the open bottom half. Add a nice helping of strawberries, another dollop of Cool Whip and cover!

DONE! Baking takes about 14 minutes per 8 biscuits and you can cut your strawberries while all this is going on… so 30min for a nice, fast, feel-good dessert!
