Cooking with Kurt: Southwest Turkey Burgers
Recipes — By kurteng on March 25, 2010 11:50 pmI made these burgers to be like chili burgers, only without the extra calories and fat… so I substituted lean ground turkey in place of the beef/pork of the chili… OH! It is also sans chili. It is a great alternative and it is a great way to incorporate healthy veggies and beans to a mean!
Ingredients
- 1 pound lean ground turkey
- 1 small red pepper
- 1 small sweet onion
- 2 celery stalks
- 1/2 can black beans (drained and rinsed)
- 1/4 cup shredded low-fat Mexican cheese blend
- 1 1/2 tbsp chili powder (from chili package)
- 2 tsp chili powder (from spice rack)
- 2 tsp paprika
- 1 tsp ground mustard
- A couple of pinches of dried ground parsley
Directions
Dice your celery, peppers and onions into fairly small pieces and throw them into a mixing bowl. Next add your 1/2 can of black beans (drained and rinsed to remove the salt). Add your ground turkey, spices and cheese. Mix well by hand and start your burner to get your pan nice and hot. Once you start making your patties, throw them on the grill or pan. Cook medium heat for 6-7 minutes per side and you are done!
It is very simple, but full of flavor, protein, fiber and low in calories and low in fat. Surprisingly, 1 pound of ground turkey should make you at least 5-6 very good sized burgers so the extra veggies give it those extra servings so you are saving money too! Below, it is served in these 100 calories thin sandwich slices from Arnold along with a slice of tomato, mixed greens, low-fat sharp cheddar cheese!
